El gallo en chicha es plato salvadoreño tradicional, aunque se cocina a nivel regional de Centroamérica, así como sugiere el nombre, se hace de gallo, chicha salvadoreña y panela.
El platillo es consumido en la mayor parte del país, pero tiene una presencia mayor en la parte central y occidental de El Salvador. El plato es consumido tanto en áreas rurales como urbanas; hecho normalmente para ocasiones especiales o celebraciones, así como días festivos o cumpleaños, por ejemplo.
Esto es porque el plato es muy complicado de preparar, y se lleva mucho tiempo e ingredientes, haciéndolo un gran proceso de cocina, y la vez un platillo que no se puede disfrutar todos los días.
2 chiles dulces
5 tomates
1/2 botella de chicha
2 chiles dulces
2 cebollas
5 dientes de ajo
1 taza de vinagre de piña
2 tablillas de chocolate
1/4 de taza de vino blanco
4 cucharadas de salsa inglesa
2 litros y medio de agua
una pizca de nuez moscada
un chile guaque
ajonjolí al gusto
pimienta negra
clavos de olor
tomillo
un chile ciruela
Una libra de papas cortada en trozos
una zanahoria cortada en trozos
2 plátanos
10 chorizos
2 huevos duros
una bolsita de aceitunas
4 onzas de pasas deshidratadas
1/2 libra de ciruelas pasas
Para marinar el gallo
1/4 de botella de vinagre de piña
sal al gusto
PROCEDIMIENTO
Desde la noche anterior debes poner a marinar el gallo en el vinagre y la sal.
En una olla con el agua echas las piezas del gallo y agregas la chicha y el vinagre.
Mientras licua los tomates con los chiles, la cebolla y el ajo y con los condimentos (ajonjolí, pimienta, clavo, tomillo y nuez moscada) finalmente agregas el chocolate.
Cuando la chicha y el vinagre rompan hervor incorpora la mezcla anterior y la carne de gallo, luego agrega poco a poco los ingredientes del aderezo, iniciando con los chorizos enteros. Hasta que la carne del gallo este un poco blanda agrega las verduras (papa, zanahoria y plátano) las ciruelas, pasas, las aceitunas, y por último los huevos. Espera unos diez minutos y retira del fuego.
