El Nixtapite, es un plato típico autóctono de la zona de los Nonualcos, tierra de Anastasio Aquino, en el departamento de La Paz, por años ha formado parte de la gastronomía del lugar, su elaboración está compuesta de alguaste, especies en polvo y condimento típico de la cocina salvadoreña, elaborado a partir de la semilla molida (pepitas) del ayote.
Doña Griselda Cruz, originaria del municipio de San Emigdio, es una de las pocas personas que conservan la receta original del delicioso tamal de nixtapite , ya que comenta que la receta la aprendió de su abuela hace unos 50 años aproximadamente, mientras compra el pescado fresco menciona que la receta ha pasado de generación en generación en su familia.
Luego de tener listo el pescado fresco y los demás ingredientes (la semilla de ayote, tomate, cebolla, sal y comino). Doña Griselda sale al patio de su casa y con un cuchillo corto las hojas de caña de Cristo y las hojas de huerta y dijo entre risas, que esa es una de las ventajas de vivir en el campo, pues todo lo tiene a su alcance. Además, asegura la hoja de caña de Cristo le da un sabor único al nixtapite.
Mientras Limpia el ennegrecido comal de barro para tostar el alguaste, busca leña bajo su hornilla para encender el fuego. Doña Cruz comenta que el consumo del tamal de nixtapite principalmente es en semana santa, aunque la ventaja de la zona, es que todo el tiempo hay pescado del lago de Ilopango; que se utiliza para elaborar este tamal.
La piedra de moler nunca le puede faltar ya que se auxilia de ella para realizar el proceso de una forma 100% artesanal, aquí es donde muele la semilla de ayote que con anterioridad a tostado en el comal de barro, a pesar de la avanzada edad, tiene fuerzas para moler en la piedra y así deleitar a las nuevas generaciones de su familia.
