Jugo de verduras para diabéticos

Ahora te traemos este delicioso jugo para que las personas que padecen de esta enfermedad puedan disfrutar de la buena comida si renunciar a los sabores. Tiene unos cuantos ingredientes y, siempre pueden ser personalizables al gusto es muy fácil de hacer.

Para preparar este refrescante jugo de verduras, necesitaremos los siguientes ingredientes

3 berenjenas
1 pimiento verde
2 pimientos rojos
1 tomate
1 cebolla
2 dientes de ajo
Unas hojas de hierbabuena
un puñado de aceitunas negras sin hueso
1 yogur natural
sal y pimienta
leche de avena o leche de vaca
aceite de oliva.

Procedimiento

1.-aceite de oliva y metemos al horno previamente calentado a 200ºC. Asamos todas las hortalizas durante unos 30 minutos.

2.- Una vez asadas, apagamos el horno y dejamos reposar dentro, durante dos horas más. Para que las hortalizas suden y suelten todo su jugo

 

3.- Pasado el tiempo, las pelamos. Los pimientos y el tomate son muy fáciles de pelar. Con los mismos dedos podremos retirar su cáscara a tiras. La cebolla ya está pelada y la carne de la berenjena la separaremos de su cáscara, que es más dura, con ayuda de una cuchara. El caldo que hayan podido soltar las hortalizas, lo guardamos. Lo necesitaremos para después.

 

4.- Metemos todas las hortalizas, cortadas en trozos grandes, en una batidora o licadora. Añadimos el caldo que hayan soltado, los dientes de ajo, unas hojas de hierbabuena, el yogur desnatado y las aceitunas negras. Trituramos todos los ingredientes hasta obtener una masa homogénea

5.- Una vez la hayamos obtenido, añadimos una pizca de sal y de pimienta negra recién molida. Y si la mezcla ha quedado muy gruesa que, será lo más probable, añadimos también un poco de bebida de avena (o de soja) o de leche entera o desnatada.

 

6.- Mezclamos bien y servimos en una copa. Puedes decorar con unas rodajas de aceitunas negras y con una hoja de hierbabuena.
