El zumo de naranja tiene 10 veces más antioxidantes

Gracias a una nueva técnica desarrollada por un equipo de investigadores de la Universidad de Granada (España) destinada a medir las propiedades antioxidantes de los alimentos que ayudan a reducir los radicales libres en nuestro organismo, hemos podido conocer que la actividad antioxidante de los zumos de cítricos así como de otros alimentos está bastante sesgada.

Los beneficios del zumo de naranja son mucho mayores de lo que pensábamos ya que el nuevo método de análisis empleado por los científicos, que simula in vitro la digestión gastrointestinal, determina que tiene valores diez veces superiores a los que indican los procedimientos utilizados en la actualidad.

Lo novedoso de esta técnica, bautizada como “respuesta antioxidante global” o GAR, es que no solo mide las fracciones líquidas de los alimentos que comemos, sino también las sólidas.

“El problema es que no se mide la actividad antioxidante de la fracción sólida –la fibra–, porque se supone que no se aprovecha; pero esta parte insoluble llega al intestino grueso y la microbiota intestinal también puede fermentarla y extraer aún más sustancias antioxidantes, que podemos valorar con un nuevo método”, explica a Sinc José Ángel Rufián Henares, coautor del estudio.

El trabajo, que ha sido publicado en la revista Food Chemistry, viene acompañado de valoraciones de distintos parámetros físico-químicos (fluorescencia, color, etc) cuyo resultado dispara los niveles de antioxidantes de productos como las mandarinas, las naranjas, loslimones y los pomelos, pasando de 2,3 milimoles Trolox/litro a 23 mmol Trolox/litro.

“La actividad antioxidante es, en promedio, unas diez veces mayor de lo que todo el mundo decía hasta ahora, y no solo en los zumos, sino en cualquier otro alimento que se analice con esta metodología”, destaca Henares.
